For those afternoons when you would like to enjoy something sweet, we bring you this spongy lemon cake. It is a classic, our grandmothers were always looking to give the best possible use to all the seasonal citrus fruits in whose aroma bask homes across the Mediterranean. It is a perfect option for giving your afternoon breaks that touch of freshness. You can enjoy it on its own or along a cup of tea or coffee.

We will need the following ingredients to prepare this delicious cake:

225 g of softened butter
225 g of sugar
4 eggs
The grated zest of 2 lemons
The juice of 2 lemons
225 g of flour
90 g of milk
8 g of yeast in powder form or baking powder

Steps to follow:

Pre-heat the oven to 170 degrees Celsius and prepare a mold of 20 cm in diameter or a rectangular mold of 8 by 21 cm

 Whisk the butter with the sugar at high speed for about 4 minutes

 Add the eggs one by one, mixing each one well before adding the next one

Add the zest and the lemon juice

Sift the flower along with the baking powder and add it to the mix in three turns, alternating it with the milk.

Bake it in the oven for about 30 to 35 minutes, or until the moment you can insert a toothpick in it and remove it coming out clean.
